Random…If Something’s Gonna Happen…

For a while, I did random posts on Mondays. (And I’ve had a lot of you email me telling me I needed to get my pattooty in gear and do them again.) Yes, they were crazy. Yes, they were weird. Yes, I know you loved them. But, I got overwhelmed with all the “random” things flying my way as soon as I started being more “random” :)

 

This seems to be a trend in my life:

-Kinda like when I wrote a book about our story – about joy through trials. Guess what? The enemy definitely tried to yank that joy away.

Practice What You Preach…Especially at the Post Office

I’m so convicted.

Today started off uneventful. But then, I had to make a mad rush to the Post Office for an important package that had to be postmarked today.

I’m on the road on a book tour – so this entailed finding all the close Post Office locations and calling to find out their hours (because they don’t all close at the same time and it’s Saturday.)

After speaking with a very kind gentleman at the only one still open, I realized I barely had enough time to make it and raced out the door.

I arrived at the P.O. with two minutes to spare…and…?

They’re closed. Yep. CLOSED.

I knocked on the door.
No one came.
They let a customer out.
I asked about it – the man wasn’t in a good mood. He said they’re closed and I could use the machine.…

Kim’s Peanut Clusters

My Grandpa loved desserts. And mashed potatoes and gravy… (But we’ll save the taters and gravy for another day)

So, since I was in the mood for chocolate – and grieving the loss of my beloved Grandpa, yet wanting to celebrate his Home-going – I decided to make my peanut clusters.

(Sorry, we’re about to leave on another book tour, and my good camera is packed, so these are from the iPhone. But hopefully, you get the idea…)

These are extremely simple to make. In fact, the invention came by throwing things in the crock-pot. Yep, you read that right – I made these in the crock-pot. (I only have 15 crock-pots, so I could theoretically make 15 batches at one time. Not that I’m going to… but I could.)

Legacy of Love – In Honor of Ray Frappier

This week has been a tough one. I’m getting ready to hit the road on another book tour, Kayla is still recovering, hubby is sick, and I got the news Sunday that my precious Grandpa is not long for this earth. My Grandpa is amazing. He’s also a WWII veteran and hero. A beloved husband, father, grandfather, and great-grandfather. I’m praising God that Grandpa is going home. No more pain. No more alzheimer’s. No more suffering. But wow, it sure is hard. Grandma and Grandpa have now been married 70 years. Wow. My family is close – and our grandparents have always been there. Always. As I sit here with tears streaming down my face, I realized that the very first blog I posted – five years ago – on Aug. 23, 2007 – was in tribute to them. So here is a re-post – Legacy of Love.

Resolutions, Words, and Homemade Ravioli

How many of you have made New Year’s resolutions? Even if it’s not specifically titled as such, a lot of us have at least said, “it’s a new year, I need to _________ .”

What about a “word” for the year? I know many people have done this for quite some time. Do you have a specific word for this year?

We would LOVE to hear from you guys about resolutions or words. I’ll (Kim) even you give you my two cents ;)

As for resolutions – this year I’ve made some goals for myself. Goals that I know I can attain. Goals that won’t stress me out. Goals that will give me that happy little check-mark and I can grant myself permission to have a little party because I did it.

Twenty Years…

Christmas was amazing. Time with family and friends. Time to celebrate our Savior’s birth.

But this year, there was something I looked forward to even more than Christmas.

Drum roll please… : This week, my hubby and I will hit the big 2-0. That’s right. We’ve been married twenty years. Did you read that?
… 20
… two times ten
… four times five
… one fifth of a century
… one score
… you get the picture.

I’m sitting here totally amazed that Jeremy has put up with me all this time. It blows my mind that after 20 years, it’s even better than ever. And I’m also confused… where on earth did all that time go?

While it’s true that our oldest will soon be (gasp!) seventeen, and our baby will soon be fifteen (say it ain’t so!) – I truly am having…

Better than Starbucks… Cranberry Bliss Bars – Kim Style

Okay everyone, after hearing request after request for the recipe – I finally remembered to post it :)

I’ve been developing my own recipes for decades (wow, did I really just admit that I’m getting old?) and this one is easy. A friend (waving at Becca!) brought me a cranberry bliss bar (I believe these are trademarked) from Starbucks. I LOVED them, and decided to try my hand at duplicating them. The result? Well, not to toot my own horn… too much… :) But everyone liked mine better. I then had several friends who brought over other knock-off recipes from the internet and we had our own blind taste test – just to make sure that we had a recipe worthy of posting.

And… mine won! (Yes, there was a little Snoopy-dancing on my part.)
